Carol Mitchell Knight was born Carol Alfredia Mitchell to the late Mr. Alvin White and Ms. Evelena Mitchell Jamison on May 14, 1955, in Berkely County, South Carolina. Her young life was nurtured by her uncle Mr. Joe Jenkins and her aunt Mrs. Anabelle Jenkins.
Carol's family and hometown friends know her best and call her Fredia.
Carol was faithful to God. She grew up attending Bethlehem Reformed Episcopal Church in Moncks Corner, South Carolina before joining Williams Chapel Church in Spring Lake, North Carolina in 1978. She served on the Missionary Board and on the Usher Board.
She graduated from Berkeley High in 1973 before marrying Mr. Jimmy Grant in 1974. The young couple celebrated the birth of 2 children, Kandra Grant (1976) and Jamyle Grant (1981).
Carol graduated from Campbell University, Buies Creek, North Carolina with an Associate Degree and a Bachelor of Science Degree in Business Administration in 1982 and 1993, respectively.
In 1978, Carol began her civil service career at Ft. Bragg, North Carolina with the U.S. Department of Defense. She retired after 44 years of dedicated and honorable service on July 31, 2020, as a Contract Specialist. During those years, she established and has enjoyed many friendships that have lasted over decades.
Carol found love again and joined a union with Mr. Robert M. Knight on November 19, 2016. They lived in holy matrimony until his death in January 2023.
Outside of working, caring for her family, and serving the Lord, she loved to dance, read, play cards, and travel. Anyone who knew her knows that she loved crabs, fish and pork chops. Carol also loved her dogs; most are most familiar with Max (Maxton), her black lab gifted to her by her daughter. Over the decades there were Roscoe, Roxie, Lucky and presently her granddogs, Jamison and King. She enjoyed life with a host of friends including, Nettie Hood and Ronnie & Rose VanDyke who she claimed as her siblings.
She leaves to cherish her memory: her daughter, Kandra Grant; her son, Jamyle Grant (Reshanda); her grand-daughters, Ja’Niya and Jada; her sisters and brothers: Syrivia White Walker (Walter); Henrietta White Rich; Angela White Robinson (late Donnie); Alvin White Jr.; Darrell White; and Maurice White (Chiresse); her cousins/siblings: Charlotte Scott (late Samuel); Christopher Jenkins Sr.; and Dekota Rivers (James). She is also survived by a host of family members and friends.
Carol loved life and life loved Carol. She had a big heart, was funny, loving, and dedicated to her family. She was a good woman and an even better mother who shared a special bond with her daughter and son. She loved them to the moon and back. Her favorite words to them were “It’s just the three of us”.
